Curated Pairing: Butter Chardonnay Oysters
This one is for all the oyster and wine lovers – look no further. Honestly, we have found the perfect wine and oyster pairing recipe you need to impress at your next lunch or dinner party. Whatever the occasion, these are sure to be a showstopper. Oysters are a great appetiser and have so many options to elevate their flavour.

Righto, let’s get to the recipe. You will need:
Onto getting the oysters on their way!
Make sure you have freshly cleaned and shucked oysters for this recipe, quality for the oysters is key for this recipe. Ensure you go to a reputable seafood shop to purchase the oysters and that they have been cleaned correctly.
Prepare the grill in your oven as you usually would and line your oven tray with foil. Crinkle the foil slightly so that when you lay your oysters, they don’t roll around.
Now for the good part…
- Evenly spread your oysters out onto the foil lined tray facing upwards
- In a medium sized bowl, combine the softened butter, garlic, chives and wine in a bowl and add a pinch of salt and pepper
- Add a small teaspoon amount of the Chardy-Butter mixture to each oyster
- Into the oven they go to grill for around 6-8 minutes, or until the sides of the oysters start to slightly brown and the butter has melted well
While the oysters are grilling, grab your serving plate and spread the rock salt on it. The rock salt will help the oysters to keep stable on the serving plate.
When the oysters are nicely golden, remove them from the oven with oven gloves and move the oysters to your serving dish with tongs.
Arrange them on your platter and place half of the lemon at either side of the plate – now you’re sorted! There you have it, these oysters are fresh and the butter pairs incredibly well with a hint of chardonnay as they grill away.

Chardonnay is one of the most versatile grape varieties and the Margaret River has a great maritime climate to allow the grape to fully ripen and in turn, produce a complex and quality wine.
This wine in particular from Franklin Tate’s Estate, has great acidity for freshness but has a noteworthy balance with a smooth buttery flavour on the palate. The high acidity yet buttery mouthfeel and flavour complements the oysters exceptionally.
