White (wine) from black (grapes). This wine was made from 85% Pinot Noir and 15% Pinot Meunier sourced from our coolest east facing block, originally planted in 1998. A blend of the 2018 and 2019 vintage, both renowned for being exceptional vintages in the Pipers Brook region. The combination of Pinot Noir and Pinot Meunier creates a generous style of sparkling wine. Aged base wine and time on lees in bottle, this wine has great richness, yet still with subtle finesse and elegance that is synonymous with the long gentle ripening period of the region.
A light straw hue, this barrel fermented sparkling wine has aromas of strawberry danish on the nose, set against a rich yellow Mirabelle plum, and fine mixed spice background. Mineral infused red fruits and finely structured tannins, this wine has a beautifully fine mousse, with lovely chalky minerality and refreshing acidity on the finish. Disgorged October 2022. 1788 bottles produced.
Located in the heart of the Pipers Brook wine region in Northern Tasmania, just above the banks of Pipers Brook on the popular Tamar Valley wine route. Sinapius is family-owned and operated by Linda Morice. Originally the two-hectare vineyard was purchased by Linda and her late husband, Vaughn Dell, in 2005.
When Linda and Vaughn started Sinapius, there was one goal in mind. To produce the finest quality wine, with as little intervention as possible. That most of the work would take place in the vineyard – from planting, to nurturing, to maintaining, and finally harvesting. Today, Sinapius continues to be recognised among Tasmania’s finest wines.

Orders less than $199 are shipped for a flat fee of $15 for standard delivery, or $20 for express shipping.
